Matching Champagne and Food
Champagne is regularly served as an aperitif or as a toast at the end of a meal, so it is often overlooked when it comes to food. However, because Champagne is naturally acidic, it makes a really good food match - and not just for oysters and caviar as you might expect, but for a number of different foods.
Non Vintage Champagne
This is the cheapest and probably most common type of Champagne available. Non-vintage Champagne is blended from wines from several years and, in doing so, this ensures that a consistent style is achieved. Non-vintage Champagne is younger and, generally, fruiter than other Champagnes, so is a perfect match for slightly lighter foods, such as egg or mushroom based dishes, hard cheeses, pasta or risotto (particularly with a cream or mushroom based sauce), vegetables, fish and seafood. Strange as it may seem, non-vintage Champagne also goes really well with fish and chips, as the acidity of the Champagne helps cut through the oiliness.
Vintage Champagne
Vintage Champagne is made from a blend of wines from a particular year, when the quality of the wine is good enough to declare a vintage. Because it has been aged for a few years, it has as slightly more complex structure than a non-vintage Champagne, so can stand up to stronger, fuller flavours. For example, all types of fish and seafood, especially when accompanied with a creamy sauce are a perfect match for vintage Champagne, as are lightly smoked foods, cheese, duck, caviar and poultry with a rich sauce.
Blanc de Blancs
Champagne is made from Pinot Noir and Pinot Meunier, which are red grapes, along with Chardonnay, which is a white grape. Blanc de Blancs, however, is Champagne which is made exclusively from the Chardonnay grape. This is a rare style of Champagne and goes well with lighter style foods and, in particular, sushi, oysters, goat’s cheese, gently flavoured white fish and vegetables.
Blanc de Noirs
This is Champagne made from just the red grapes, Pinot Noir and / or Pinot Meunier. If you come across a bottle, try teaming it with full flavoured foods such as meat and cheese.
Demi Sec
Demi sec style Champagne is sweeter than traditional brut champagne and is a good match for foie gras or foods that have a slight edge of sweetness to them. It also goes well with desserts (as long as they aren’t too sweet), as well as red berries - particularly strawberries.
Rosé
Rosé based Champagne goes very well with seafood, including prawns and lobster, or slightly pinker style meats including lamb, ham and game.

Beginning garment construction, need help with sewing machine choice?
I am a virgin to sewing machines! But I want to start making my own clothes, Ive always had a passion for it. Anyways, I want a machine that is EASY to use and figure out, yet a machine that can grow with me (trust me I will be spending every waking moment on the machine and I will grow fast). From other post I have seen people saying that vintage machines are the best. I have found some vintage janomes on ebay that I want to bid on, but my concern is that vintage does not mean easy to use. (No easy threading and bobbin) Everyone has their own opinion on what a good brand machine is. I have been looking at Janomes and want to know if that is a good start and if so does anyone know what specific models work well.

The best place for sewing machine information is on patternreview, a website that has reviews of different machines, articles on how to buy a machine and what beginners should look for: http://sewing.patternreview.com/ It's a place that i hang out a lot and it will have lots of advice and assistance as you go through your sewing journey.
You do need to be willing to spend money on the machine, a good machine will make sewing pleasurable and each session will be about constructing clothes, not making the darned machine work. You will need more than a basic machine, as your skills develop you want the machine to keep up with you.
Janome is a good machine if you have a budget and you want a new machine. They take standard low shank and snap on feet, which will increase your machine sewing ability. Much of sewing special fabrics and working special techniques is about the correct needles, thread, machine feet and accessories. Many modern accessories don't always fit the older machines, especially the high-shank, super high shank and slant shank machines. I give sewing lessons and the student with janomes tend to have few tension, threading and bobbin issues than other machines. Brother machines from walmart and Canadian tire and other places tend to have more tension issues than others. I find Euro-pros quite maddening, when they work, they are fine, but when they don't work they are garbage. And you can't tell by model, the same model can have good machines and clunkers. Berninas, Pfaffs and babylocks tend to be expensive. New Berninas are very expensive right now, expensive to the point that I will no longer recommend them due to the outrageous prices they are selling them for.
I am of two minds when it comes to old machines. Some work well, some were never cared for properly and are useless. An old machine that does not work is not a bargain. An old machine without an instruction manual is also worthless.
You should test drive a machine before buying. I would never buy a machine without trying it first. If that means making a trip to a dealers shop then it's worth it. A dealer can offer operation lessons, offer feet, needles, bobbins and accessories for the machine, and the dealer is often a trained technician or has on on staff. the technician will be able to keep it in good repair for you. I have nine machines and the technician is a valuable member of my team. I'm actually on a first name basis with all the sewing machine dealers in the area.
